Most lines open a group at eight cabins, and the amenities improve as the block grows. If you're bringing fewer, I'll still book you — you just won't unlock the group extras.
Cabins in a block can usually be released before the final payment date without penalty. Deposits are refundable up to the line's deadline — which I'll tell you in writing before you pay anything.

Yes — pre- and post-cruise hotels, transfers and air can all be added. For groups sailing from the mainland, arriving a day early is strongly recommended and I'll build that in.
